Boat Recommendations:
Sea Kayaks are good for absolute novices. Aim for fibreglass/composite, which is lighter than plastic. The lighter the better.
Stable Multisports such as Horizon Challenger are also very good choices for novices. They have similar stability to sea kayaks, but without the unnecessary weight. They are less common on the 2nd hand market.
TK1s are suitable too, however they are more challenging than sea kayaks. They are more unstable than sea kayaks. For those who want to take up paddling seriously, these are an ideal first boat.
Decent second hand boats can be found for under $1000.
